Maftool is a version of couscous made in Palestine, the grain is larger than the traditional couscous. According to Canaan Fair Trade, “The wheat is boiled, sun-dried and cracked, and hand-rolled in freshly ground organic whole wheat flour, then steamed and sun-dried.”

A traditional Palestinian grain, handmade and versatile. Ours is homemade with organic whole wheat flour for a healthy and hearty meal. It is simple to prepare it by steaming lightly using water or an aromatic broth, then eat alongside meats, stews or toss into a salad.
